spiced apples are now my favorite dessert to make at home

i chop some apples, throw it in a little pot or pan with some coconut oil.  heat it…while the apples are cooking, i add a splash of rice milk, sprinkle some cinnamon and nutmeg and throw in some raw almonds.  when i want more sweetness i sprinkle in some coconut sugar.

once the apples are soft, they’re ready to serve…and i’ve got a healthier alternative to apple crumble.  the soft yummy spiced apples and occasionally a bite of softened almond that’s just the perfect crunch to contrast the almost mushy apples.

thanksgivings.

this year i made the usual pumpkin pie…i also made some mashed sweet potatoes and decided to tackle a cheesecake for the first time.  pumpkin cheesecake with a salted butter caramel & hazelnut sauce on the top.

and now i’ve polished off whatever leftovers i brought home this morning….and i don’t feel like i want to eat for another week.  so bloated and full of dairy and meat and grains….basically everything i DON’T eat normally.

today’s edition of the green smoothie included:

1 banana

coconut water and meat of 1 young coconut (it’s so fun opening it.  when you finally get to drink the water, it’s so satisfying cause you had to work to get to it :])

1 half of a small tangerine

10 strawberries

1/2 sample packet of Amazing Grass Green Super Food powder (purple packet)

small handful of spinach (only greens besides the kale i have laying around that i’m saving for a wilted kale salad for din din tonight)

dash of apple cider vinegar to give it a zing

dash of himalayan salt to bring out some tartness that was hiding amongst the coconuttiness/banananess

so technically not a GREEN smoothie cause i barely added any greens to it, but the Super Food powder takes most of its minerals and whatnot from greens…and the powder was way green so that the drink definitely was a beautiful green color.

100 gram pack of Sambazon pure unsweetened açai berry pulp

1/2 sample packet of Amazing Grass Green Super Food powder (purple packet)

juice of 1/3 lemon

dash of himalayn salt

a few bunches of spinach

1 tsp of flax seed oil

a very filling 450 calories, but it’s gonna keep me very full until afternoon. jam packed with minerals and vitamins!

i really miss my raw lifestyle

besides the gourmet pastries and occasional gourmet meal i enjoy here in paris, i really really miss my raw life.

i had some noodles that are making me want to throw up now.  but then i’m munching on some almonds to take my mind off of the heavy noodles.  however, these are roasted and salted….and i really am not enjoying it.  i don’t know how i used to love roasted nuts.  they are so much more rich and flavorful, not to mention more nutritious, when raw.

unless i’m eating cooked foods that are blissfully good and served in the perfect small gourmet servings, i want back to raw life noww!!!!!

plan of action while anne is here. green smoothies and fruit for breakfast on the weekdays.  fruit and green salads for lunch unless dining with anne.  and then everything else will be quality good food that could only satisfy anne’s difficult to please palate. so glad that the vietnamese market down the street has an array of tropical fruits to aid in my attempt to eat more whole foods during the daytime.

Today was a good day, food-wise :)

I blended together bananas, blackberries, raspberries, and a tad bit of açai pulp for a smoothie base.  I wound up mixing a few spoonfuls with a splash of almond milk and cinnamon.  This gave it a wonderful froyo consistency.  Garnished it with some raw nuts, fresh blackberries, and a squeeze of lime.  And I wound up with an açai bowl that was truly healthy without any added sweeteners or heavy granola! :)  I was a happy girl!

For dinner I threw together a random salad.  Spinach, hemp seeds, celery, and sunburst tomatoes (try snacking on these babies as is!  so sweet and yummy…discovered the amazingness of these from the lovely nina), 

As I was poking around our spice and condiment cabinet in the kitchen, I decided to try a little experiment instead of doing my usual go to oil/vinegar/lemon/salt/pepper combo for dressing.  I spooned a little bit of the Banana-Berry base I had in the freezer, popped it in our handy Magic Bullet (yes, this thing is amazing for blending up small batches of things such as dressing).  Then I proceeded to add a little bit of this and that, whatever seemed to come to mind as I was mixing the thing up.  I remember throwing in some lemon juice, pomegranate juice, olive oil, flax oil, red wine vinegar, apple cider vinegar, sweet paprika, cayenne, salt, and pepper.  I think I diluted it further with some water, but boy was that dressing yummy!  Perfect balance of sweet and sour, but full at the same time from the oils and the banana.  And the spices gave it a little kick…very subtle.  Just enough for it to be there without being overwhelming.  I guess it was a complicated recipe, but it was so yummy.

And now I’m eating a little bit more of the banana-berry mixture.  A different variation of the “froyo” from earlier, but just as good.

nom nom nom.  good, healthy food that is yummy always makes me smile at the end of the day.  I don’t have to go to bed feeling like I’m carrying a food baby.
